As Momofuku Ando was passing by a black market area in Osaka soon after the Second World War, he happened to see a long line of hungry people waiting in the cold for a bowl of hot ramen noodles. This experience made Ando keenly aware of the critical importance of food.
A determined Momofuku Ando set up a makeshift laboratory in a shed behind his home and immersed himself in development of a new food product.
Asian noodles, originated from China back in 5000 BC. In 1958, Nissin founder Momofuku Ando invented the world’s first instant noodles. The product was Chicken Ramen, inexpensive, tasty noodles that could be prepared simply by adding boiling water.

Momofuku Ando mounted the manufacturing technique of flash frying noodles once they have been made, developing the "instant" noodle.
Instant noodles are made from wheat flour, starch, water, salt or kansui (an alkaline salt mixture of sodium carbonate, potassium carbonate, and sodium phosphate), and other ingredients that improve the texture and flavor of noodles, partially cooked by steaming and further cooked and dehydrated by a deep frying process.
Momofuku Ando, who constantly pursued flavor and convenience, went on to develop an even more convenient product: Cup Noodle, the world’s first cup-type instant noodles.
More than 73 products have been launched in Japan under the Cup Noodle brand since its introduction in September 1971.
